Hi flist, I need you to tell you about a problem I'm having with D's dance school. I'm angry with them and I don't know any more if I'm thinking straight because I'm so mad.

I enrolled D for a dancing exam, at the cost of $45, which was to take place in early August (two days after we returned from a week in Tassie). The initial information just gave the date, and as it was a Friday - her lesson day - I assumed the exam would take place during the lesson time (E dances with a different dancing school and her exam was during her class time). This was the first dance exam D has done so I had no prior knowledge of anything different.

We got back from Tassie on the Wednesday and on the Thursday D spent hours away from school at a medical appointment. On Thursday at about 3pm the dance teacher knocked on my door with the exam information for the following morning - 20 hours notice and the first time I was aware that the exam was to be held during school time, and at a different location.

I was unable to rearrange my life and unwilling to take D out of school yet again, so she did not attend the exam. I was told she'd be enrolled into the make-up exams by the teacher and that she'd be able to do the exam in October. At this time I was told that presentation of a medical certificate might mean some consideration - nothing definite - but that the make-up exam would be the path to take. Given the medical appointment was the day prior I didn't feel that this was an appropriate avenue, and anyway, the physiotherapist has been on family leave since soon after D's last appointment.

When October rolled around and I'd heard nothing about the exam, I cornered the teacher and asked what was going on - she had no idea, and hadn't investigated it - only to find out the following week that enrollments for the exam were well and truly closed and she'd missed out.

Finding out that I was $45 out of pocket by their incompetence, I paid $45 less on this term's fees. Yesterday I got this letter in the mail:

B wants me to just pay the fees and be done with it. I want to stand up for the principle of the matter and stop them from stuffing around other families in future.

As many of you know, we're most likely going to be moving to Norway in about 5 months time. Before this fabulous opportunity came up I knew next to nothing about Norway, so I've been looking up random things about the country, and thought I might gradually share them with LJ.

Today's trivia:
Norwegians drive on the right. Their blood alcohol limit is 0.02, which means essentially that you don't drink at all if you're driving. And the speed limit shopping and school areas is 30km/h.
 
 
 
 
 
 
I've finally done the third border on this centre. This border is so late - I received it nearly a year ago and it was supposed to be done in six weeks. It's been weighing on my conscience for a long time too. I was so sick last year that projects got put on the back-burner. It's nice to finally be able to get these things finished.

I was just trying to share my recipe for vegan cheesecake, and it's disappeared from the internet! So I'm putting it here for safe-keeping. Or something...

Vegan Cheesecake


Ingredients:
* 3 tubs Tofutti plain vegan cream cheese
* 1 cup sugar
* 1/4 cup lemon juice
* 2 tsp vanilla
* 1/4 cup flour
* ready-made pie crust

Method:
* Mix the "cream cheese", lemon juice, vanilla and sugar together in a mixing bowl. Once smooth, fold in the flour, mixing well.
* Pour into pie crust
* Bake at 180deg for 30-40 minute, until the top just starts to turn brown. Refrigerate overnight.
* Sprinkle with dutch cinnamon and serve.

Note: If vegan pie crust is unavailable, a vegan crust can easily be made by mixing a packet of plain biscuits (eg. Nice biscuits) with Nuttlex or other vegan margarine.

I make my own base in the blender first, and press it into a lined and well greased spring-form tin. Then using the same blender (without washing it!) I make the cheesecake part - saves on dishes.

Variations:
* Berry cheesecake - scatter frozen berries over the base before pouring on the cheesecake mixture. For extra effect, then take a 1/4 cup berries and blend them with a stick blender, carefully swirl it through the cheesecake before baking. The swirl below was made by carefully dripping the berry juice onto the cheesecake mixture using a teaspoon, forming a spiral. Then I used a chopstick to drag the swirl: starting at the centre, drag the stick to the edge. Do this 6-8 times, evenly spaced. Then midway between the existing drag lines, starting from the edge, drag the stick to the centre. Look at the piccy if that made no sense!
* Chocolate fudge - I once made up a batch of vegan chocolate fudge (must find that recipe too) and put a layer of fudge on top of the base, and similarly swirled some though after pouring. I seem to remember it was hard to cut but incredibly tasty :)

Would anyone like to purchase a tray of mangoes? They're selling them as a fundraiser for school, $25 for a tray of 17. I need to know numbers by Wednesday 11 November, and delivery is planned (though may be subject to change) for Tuesday 1 December.

If I (or Bron) don't see you before Wednesday, we can pay for you and then you can pay us back when we meet to hand them over. Delivery will be to me here in Mount Waverley, so getting them to you could be fun - if I have enough interest I may take a long drive and come visiting on Tuesday night :) Especially happy to drop in to MonUCS!
